2 million people are being starved in Gaza. Over 16,000 children have been killed. Yet most of the world remains silent. At a time when food is weaponised at an unfathomable scale, sharing a recipe video feels horribly jarring. Yet as a content creator, food is my language, and the voice I have on this platform. Like many of you, I too struggle with how to show my support. But the one thing history has taught us, is that silence is not an option. So, together with my friend Fadi Kattan I made a watermelon jelly as a symbol of solidarity (recipe below). RECIPE 🍉 Ingredients 1.25kg watermelon 50g golden granulated sugar 50g cornflour 1 small cinnamon stick (optional) 3-4 jasmine blossoms (optional) 2 tbsp lemon juice A few pistachios 1-2 pieces of chocolate A few mint leaves Method 1. Scoop out the watermelon flesh, blend, then pass through a sieve. Measure out 500ml juice. 2. In a saucepan, whisk 4 tbsp of the juice with sugar and cornflour into a slurry, then whisk in the rest of the juice and add the cinnamon, jasmine and lemon juice. Bring to a gentle boil, whisking often, then cook until thickened. 3. Reduce heat and simmer for 3-4 minutes more, stirring it often. Turn off the heat, discard the cinnamon and jasmine flowers 4. Divide between four molds or bowls, allow to cool slightly, then refrigerate for at least 1 hour. Roughly chop pistachios and chocolate. 5. Tip out the jelly and top it with pistachios, chocolate and mint
