Cook the ground chicken in a pan and drain excess liquid. Turn heat to simmer and add sauce ingredients and cook until warm GREEK YOGURT BOWLS Each bowl ¾ cup 2% plain greek yogurt ¼ cup blueberries ¼ cup strawberries ½ kiwi DECONSTRUCTED RED ENCHILADAS 2 lb ground chicken 24 oz jar red enchilada sauce 1 can black beans 1 can corn 3 cups cauliflower rice 2 cups chopped spinach 5 small carb-balance tortillas Toppings: lite mozzarella, greek yogurt, avocado Cook the ground chicken in a very large skillet and drain excess liquid.
