After many attempts, she’s perfect 🥰 MEDITERANEAN BOWL RECIPE INGREDIENTS Bowl 1 bag spring mix 1 lb ground chicken 1 egg plant 1 can chickpeas 3 tomatoes 2 cucumbers 1 red onion 1 cup water 1 cup distilled vinegar ¼ cup cane sugar Lazy-Girl Tzatziki (tzatziki without shredded cucumber because there’s already cucumber in the dish) 1 cup 2% greek yogurt 1 pack of fresh dill (2 oz) ½ tsp garlic powder ½ tsp salt INSTRUCTIONS 1. Make the pickled red onions at least 2 hours ahead of time: In a small saucepan, heat water, vinegar, and sugar over low heat for about 2 minutes, just until the sugar dissolves. 2. Slice the red onions and place them in a jar. Once the liquid has cooled to room temperature, pour it over the onions, seal the jar, and refrigerate for 2+ hours. 3. Preheat the oven to 425°F. 4. Dice the eggplant and add it to a lined baking sheet along with drained and rinsed chickpeas. 5. Season as desired and roast for 30 minutes, or until golden. 6.
