Never thought would inspire a recipe but here we are GF BLACKBERRY COBBLER Ingredients Topping: ¼ cup room temperature butter 1 cup oats ¼ cup almond flour 2 Tablespoons maple syrup 1 teaspoon vanilla extract ½ teaspoon cinnamon ⅛ teaspoon sea salt Filling: 2 cups fresh or frozen blackberries ¼ cup maple syrup 2 Tablespoons cornstarch ¼ teaspoon cinnamon Instructions 1. 30 min before, set out butter to bring to room temperature. 2. Preheat oven to 375 degrees fahrenheit. 3. In a medium bowl, make the topping first by mixing together the maple syrup and butter. Then add in and mix all other topping ingredients and set aside. 4. In a small saucepan over medium heat, add maple syrup, cinnamon and cornstarch and whisk until heated through and no clumps remain. 5. Add in berries and allow them to warm for a few minutes before removing from the heat. 6. In an 8×8 inch baking dish, grease with butter and pour in the berry mixture from the saucepan. 7. Finally, add the topping over the berries and bake 20 minutes if using fresh blackberries and 30-35 minutes for frozen blackberries. 8. Remove from oven and allow to cool slightly before digging in.
